Phospho-Bind is Rockets’ engineered phosphate system for myosin protein extraction and Water-Holding Capacity (WHC) — the meat-science term for how much water and fat a protein matrix can retain. Named directly after its mechanism (Phospho = the phosphate chemistry itself, Bind = its measured, documented function of raising water-binding capacity), it replaces large doses of traditional phosphate with a lower, more effective, and consumer-safer alternative.

Low yield in meat and poultry processing almost always traces back to Water-Holding Capacity (WHC). When myosin protein isn’t extracted efficiently, WHC drops, and five specific, documented failure modes appear:
- Weight and juice loss during freezing and storage — the industry calls this purge in frozen meat.

Meat science research establishes a specific, documented mechanism for how phosphates raise WHC: they shift meat’s pH away from myosin’s isoelectric point (pI ≈ 5.5), increase ionic strength, and dissociate the actin-myosin cross-bridges (actomyosin) that otherwise trap myosin inside the muscle fiber.1 This is exactly what “Phospho-Bind” is named for.
