How Magic Bites Works

Meat emulsion research describes a meat batter as a two-phase system in which salt-soluble proteins — primarily myosin — form a protective monolayer, or protein interfacial film, around each dispersed fat globule.1 “Emulsion breakdown” occurs when this film is too thin or weak to withstand heat-driven fat expansion during cooking.2 Magic Bites is engineered specifically to reinforce this film.

Cold Cuts vs. Frost — Why They’re Not Interchangeable

Cold Cuts variants use a solid, thermally irreversible gelation system — once the protein network sets under heat, it does not weaken even under extended pasteurization. Frost variants use a dual gelation system engineered for freezing and repeated temperature fluctuation, never exposed to a pasteurization-length heat cycle. The Chicken Frost variant carries an additional function absent from the beef line: protecting poultry fat from melting out during deep frying and preventing coating separation from steam pressure.
