Flo Mix is Rockets’ specialized-process family — the one line that isn’t split by species, because its target substrate isn’t meat protein at all. It combines two distinct technologies: calcium pectate cross-linking for vegetable cell protection during drying and freezing, and extract-based systems for consistent flavor identity across mixed beef-and-poultry production.

Food science literature documents a specific mechanism for calcium’s protective role in calcium pectate vegetable freezing: calcium ions cross-link with pectin in plant cell walls to form calcium pectate, a more rigid structure that resists mechanical damage.1 Research on frozen and fried vegetable products confirms this cross-linking measurably increases tissue firmness and can reduce oil absorption in fried coating applications.2

Builds a solid calcium pectate network within plant cell walls, preventing collapse during rapid hot-air moisture extraction, with an osmotic shield against violent cell rupture.

Cryoprotection (IQF Freezing)

Functional sugars and calcium ions coat plant cells, forcing internal moisture to freeze in an organized pattern via a chelating system that immobilizes enzymes and prevents ice crystals from tearing cells apart.
